How to Pipe Chocolate Words That Make a Sweet Statement

Every decorated cake makes a statement, but one with piped words says so much more! Learn to pipe chocolate words to decorate your next cake with a special message.

Here’s how to make piped chocolate words and shapes.

Materials

  • 7½ ounces white chocolate or candy melts
  • 3/4 teaspoon (1.25 mL) cooking oil
  • Liquid food coloring
  • Toothpicks
  • Piping bag or zip-lock bags
  • Baking sheet
  • Waxed paper or non-stick paper
  • Masking tape
  • Scissors

Tip:

Be sure to have an iced cake ready to display your piped words and shapes. I used a simple cake roughly iced in white chocolate ganache.

How to pipe chocolate words

Copy words design

Step 1:

Make a template with the words you want to put on your cake, and be sure to use a font where the letters are continuous. Print the template and place the paper on a baking sheet.

Cut a piece of non-stick baking paper or waxed paper to cover your template. Secure the paper to the sheet with masking tape. If you are working in a very hot climate, place the sheet in the refrigerator for 10 minutes before moving on to the next step.

Step 2:

Melt 3½ ounces (100 g) of white chocolate and color with ½ teaspoon (2.5 ml) cooking oil mixed with 10 drops of food coloring. For example, for my orange words, I mixed two drops of red food coloring with eight drops of yellow. If you prefer, use pre-colored candy melts instead.

Pour the colored chocolate into a zip-lock bag and snip off one corner to make a piping bag. (If you have the materials, you could also use a piping bag, coupler and piping tip.)

Step 3:

Following the design on your template, pipe the outline of a word onto the pan. Make sure that all the letters touch one another; otherwise, the word will break when you lift it.

If the chocolate in the zip-lock bag starts to set, heat the bag in the microwave oven at 50 percent power for 10 seconds at a time until the chocolate is melted.

Step 4:

When your sheet is full, place the sheet with words in the refrigerator for no longer than 10 minutes for the chocolate to set and harden. Remove the sheet from the refrigerator and peel the words off the paper.

Step 5:

Pour 2 ounces (50 g) of melted white chocolate or candy melts into a zip-lock bag and snip off one corner to make a piping bag. Piping some of the chocolate on the back of each word and press it onto the side of your cake.

Step 1:

Create and attach a design template the same way you did for piping words.

Step 2:

Melt about 2 ounces (50 g) of white chocolate, color it as desired and pour it into a piping bag.

Step 3:

Start piping, following the template.

Step 4:

When your sheet is full, place the sheet in the refrigerator for no longer than 10 minutes for the chocolate to set and harden. Remove the sheet from the refrigerator and peel the hearts from the paper.

You can display either the front or the back of the design, depending on your preference.

Step 5:

You can attach the design the same way you did with the words, or you can make them stand up. If you want your design to pop out of the top of the cake, attach a toothpick to the backs of the chocolate with some extra melted chocolate.

Tip:

The chocolate hearts and words can be made up to two weeks ahead of time and stored in an airtight container in a cool, dark cupboard.
