10 Comforting Soups to Make This Weekend

How much soup can one family consume? In deep winter, there may be no limit! That’s why we’ve rounded up our absolute faves to make next week’s soup supper the very best ever. All you need is a hungry crew (and maybe a loaf of bread!)

1. Steak Tortilla

This one has it all: bold, spicy flavors and that lovable tortilla crunch on top. Plus, it’s the perfect way to use up leftover meat.

2. Creamy Butternut Squash and Fennel Soup

You might not think of fennel as an “everyday” ingredient, but it’s totally easy to work with and absolutely magical when paired with old faithful butternut squash.

3. Chicken Noodle Soup

Dust off the pressure cooker and whip up this beloved classic in 30 minutes flat. That leaves plenty of time left over for making grilled cheese to go with. (Crusts optional.)

4. Leek + Potato Soup

When it’s freezing outside, potato soup is in a league with roaring fires and down slippers for cozy, comforting wonderfulness. This version brings the warmth in a healthy way, without too much dairy.

5. Wonton Soup

Nope, you do not have to leave the house, or even fire up Uber Eats, to enjoy delicious wonton soup. Save this one for a weekend so you’ll have time to shape the wontons by hand. So satisfying!

6. Spiced Autumn Vegetable Soup

This is no typical veggie soup. Chef Ellie Krieger gives her version a little Caribbean flair with the addition of a secret ingredient: allspice!

7. Winter Squash Soup

You can use any winter squash you want for this recipe, but butternut squash and pumpkin are at the top of the list. It's basically autumn in a bowl!

It's officially soup season, and we're celebrating with all the seasonal flavors. You can use any winter squash you'd like for this recipe, but butternut squash and pumpkin are high on our list of favorites.

8. Roasted Carrot Soup With Pesto

In just three steps, you have a mellow, yummy soup. The best part? It's 100 percent healthy.

In the world of fall and winter vegetables, there are those that get the spotlight while others often play second fiddle to those that shine. I'm such a big proponent of carrots because the color is gorgeous and the flavor, especially when roasted, is a mellow, delicious flavor. This healthy soup is simple and uses the entire carrot package — tops and all!

9. White Bean Soup

With a little sausage or bacon, this soup has a rich, smoky flavor and is hearty without much meat. And if you're a vegetarian, simply leave out the bacon bits and rely on the white beans, carrots and celery.

Happy soup season! I’m ready to sit by the fireplace and while waiting for a simmering pot of soup to bubble and spurt on the stove all day long.

10. Veggie Soup With Farro

Love Italian food, but don't want to be weighed down with pasta tonight? We've got the soup for you — this classic Tuscan soup is packed with veggies you'll love.
