This "Nice Cream" Is Almost Naughty!

Actions

.

How can something that's basically fruit rock your taste buds like ice cream? If you haven't met "nice cream," welcome to the party. Dairy-free, gluten-free and added sugar–free, this stuff is pretty much a summertime miracle.

Start by making the base: Freeze peeled, chopped ripe bananas, then blend them in a food processor until smooth. Then dress it up however you want (we've got some ideas to get you going). That's it!

1. Smoothie bowl

.

We know, we know… the smoothie bowl has certainly had its moment. But hear us out: You’re probably already going to put your nice cream in a bowl, so why not spend few more minutes on fruity toppings? For this recipe, blend three frozen bananas with a cup of sour cherries and four spearmint leaves to make the base. Then top with fresh fruit and edible flowers for an Insta-worthy work of art.

2. Parfait

.

The extra effort is worth it, promise! Add strawberries to banana-based nice cream to create a new flavor, then layer with chia seed pudding and fresh fruit for a treat you can eat any time of day.

3. Split

.

Now you can indulge in that banana split without the belly ache. Start with a big batch of banana nice cream and add strawberries to one third and blueberries to another third. Plop a scoop of each over fresh, sliced bananas and top with nuts. (Sparkler for garnish highly encouraged, but optional.)

4. Sandwich

.

Sandwich standard banana nice cream between your favorite cookies — store-bought or freshly baked, dairy-free or dairy-full. If you’re looking for us, we’ll be in the kitchen trying every combination we can dream up.

5. Float

Set down the spoon and reach for a refreshing nice cream float. Combine frozen bananas, cherries and blueberries, along with a pinch of vanilla powder, for the base. Scoop into a glass and top with coconut water.

When it comes to baking, it’s all about the butter, right? That’s why you might be surprised to learn that Bluprint’s own Man About Cake, Joshua John Russell, has been living dairy-free for more than 10 years, ever since he learned that both the lactose (sugar) and casein (protein) in milk don’t agree with him. According to JJR, you can make just about anything without dairy, and he promises you can’t tell the difference. All it takes is willingness to embrace a little trial and error. Here's how!
