2 Ways to Serve Frozen S'mores This Summer

S’mores are a classic campfire treat — sinful, sweet, gooey, warm and completely satisfying! But even though campfires are summer staples, warm weather also makes most of us crave cold treats. If you're torn between the two options, you’re in luck! I’m here to share two versions of frozen s'mores to satisfy all your cravings.

These frozen s'mores recipes mix the best parts of summer: campfire treats and ice cream!

There are plenty of ways to serve a cool s'more treat, but two of my favorites are s’mores ice cream pie and a s’mores ice cream sandwich!

For both desserts, we’ll be concocting a roasted marshmallow ice cream using — you guessed it —roasted marshmallows and vanilla ice cream. Each of these recipes use the same ice cream base, but in different amounts, so pay close attention to the listed amounts of the ingredients in the recipes below.

How to make roasted marshmallow ice cream

To make this ice cream, you’ll need to roast marshmallows in your oven and add them to vanilla ice cream in a food processor. The ice cream will not be smooth — it will freeze the marshmallow into smaller bits, which is OK. That's what we’re going for. It won’t be evident once the ice cream becomes frozen again.

Roasting the marshmallows

Turn your oven broiler on high. Line a cookie sheet with waxed paper and grease it. Please grease the parchment — don’t skip this step!

Place marshmallows on the cookie sheet and place in the center rack for only 30-40 seconds. Keep the oven door cracked open so you can keep a close eye on the marshmallows.

Pull them out when they’re golden brown.

Mixing the ice cream

Place half of the ice cream (the amount depends on which recipe you’re using) into the food processor followed by the warm roasted marshmallows. Process until the mixture is smooth. Add the remaining ice cream and pulse until it’s combined.

How to make s'mores ice cream pie

Makes one 9 inch pie.

Crust ingredients:

  • 9 graham cracker sheets (one sleeve of the classic rectangular sheets)
  • 3 tablespoons melted butter

S’mores ice cream ingredients:

  • 4 cups (2 pints) vanilla ice cream
  • One 10-ounce bag of marshmallows

Chocolate topping ingredients:

  • 1 cup semisweet chocolate chip morsels
  • ½ cup heavy whipping cream

Step 1: Make the graham cracker crust

Use a food processor to crush graham crackers into crumbs. Add melted butter and pulse until it’s combined.

Pour the mixture into a 9-inch pie plate. Press it firmly on the bottom and along the sides. Refrigerate.

Step 2: Add the ice cream

Place 2 cups of ice cream into a clean food processor bowl.  Roast marshmallows as directed above and place in the food processor while still warm. Pulse then whirl continuously until the mixture is smooth. Add remaining ice cream and pulse until combined.

Pour the ice cream into the crust and smooth the top. Press a parchment square over the top so it adheres to the ice cream. Place the pie in the freezer for at least four hours to firm up.

Step 3: Add the chocolate topping

Make the ganache topping just before serving. In a small bowl, heat heavy cream in the microwave for one minute. Add chocolate chips and stir until melted and smooth. Microwave in 20-30 second bursts if needed, to melt it further.

Drizzle ganache over the top of each slice.

How to make s'mores ice cream sandwiches

Makes 9-10 ice cream sandwiches

S’mores ice cream ingredients:

  • 3 cups vanilla ice cream
  • 36 (about 7 oz) marshmallows

Chocolate topping ingredients:

  • 1 cup semisweet chocolate chip morsels
  • ½ cup heavy whipping cream

Additional ingredients:

  • 18-20 graham cracker squares

Step 1: Make the ice cream

Line an 8-inch square pan with parchment paper and set aside. Place half of ice cream into a food processor bowl. Roast marshmallows as directed above and place in the food processor while still warm. Pulse then whirl continuously until the mixture is smooth. Add remaining ice cream and pulse until combined.

Pour mixture into pan and freeze for six hours or overnight.

Step 2: Make the chocolate topping

Make the ganache topping just before serving. Heat heavy cream in a bowl in the microwave for 1 minute. Add chocolate chips and stir until melted and smooth. Microwave in 20-30 second bursts if needed, to melt it further.

Step 3: Build the sandwiches

Cut or scoop ice cream into nine equal portions and sandwich between two graham crackers. Dip the sandwich into the ganache and decorate with more chocolate drizzles.
