Peasant bread is a no-knead yeast creation that should be every novice bread baker's first project. This recipe is made in one bowl, uses just five ingredients and requires no special equipment. The best part: you can make it from start to finish in two hours. So the only question is, why haven't you baked it already?
Yield: 2 loaves; serves 8
- 2 cups warm water (approximately 100-110 F)
- 2¼ teaspoons active dry yeast
- 1 tablespoon brown sugar
- 2½ teaspoons salt
- 4 cups all-purpose flour
1. In a large bowl, combine water, yeast and sugar. Let stand for 5 minutes, until the yeast is slightly foamy. Add in the salt and flour and stir until a uniform batter forms, about 1 minute.
2. Cover the dough with plastic wrap and let it rise in a warm place until it's doubled in size, about 35-45 minutes.
3. Preheat the oven to 425 F. Grease two 1-quart oven-safe bowls or two 8" x 9" loaf pans. Divide the batter evenly into the prepared containers.
4. Let the loaves rise, uncovered, for 15-20 more minutes.
5. Bake for 10 minutes at 425 F. Then, without opening the oven door, lower the temperature to 375 F and bake for 22-25 minutes, or until an instant-read thermometer inserted into the center of a loaf reads about 200 F.
